Malabar Kaypathiri
A staple flatbread of Kerala kitchens, cooked on a hot tawa until it puffs and develops golden spots. Tear it apart with your hands and use it to mop up every last drop of curry.
Ingredientsfor 3 servings
- Rice flour 1 cup
- Shallot 6
- Cumin seeds 1 tsp
- Coconut 1 cup
- Salt, to taste
- Water 2 and half cup
Preparation
Step 1
Get a blender and add the coconut, shallots and cumin seeds to it.
Step 2
Grind it slightly.
Step 3
Meanwhile boil water using salt.
Step 4
When it boils add the mixture of coconut to it.
Step 5
Next, add the rice flour to it and Stir everything together thoroughly.
Step 6
Then off the flame and close it for 5 minutes.
Step 7
Then start mixing using hands before it becomes cool.
Step 8
Divide it to small dough.
Step 9
Make it to small balls.
Step 10
Get a ball and make it flatten by using hands.Repeat same and make pathiri with all balls.
Step 11
Then heat a pan and when its hot add oil to it.
Step 12
Then place pathiri in it.
Step 13
Cook both the sides.
Step 14
Then transfer it to a casserole.
Step 15
Serve while still hot along with beef curry or chicken curry.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
