Malabar Kannu Pathiri
Kannu pathiri is great in taste and unique in the mode of folding. Can be served with curry and is popular in festive occasions.
Ingredientsfor 3 servings
- 125g/1 cup All purpose flour Maida
- 125g/1 cup Wheat flour
- 2 tbsp Butter melted
- Salt, to taste
- Oil As reqd — for deep frying
Preparation
Step 1
For preparing malabar kannu pathiri, take a flat bottomed vessel and pour wheat flour and maida.
Step 2
Rub in butter and add required salt. Sprinkle sufficient luke warm water and make a stiff dough.
Step 3
Keep this dough aside for 30 minutes.
Step 4
Divide the dough into average sized balls and flatten these balls into thin rounds by sprinkling flour.
Step 5
Fold each side towards centre and fry in hot oil the folded upward side first and then the bottom side.
Step 6
Repeat the same process with the remaining balls.
Step 7
Malabari kannu pathiri is ready and serve with any non vegetarian curry.
Tip
Resting the dough is not optional — it relaxes the gluten and makes the dough easier to roll. At least 30 minutes, ideally longer.
