Malabar Garam Masala Powder
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 20 g Cloves
- 20 g Cinnamon
- 60 g Fennel seeds (Perumjeerakam)
- 30 g Cumin seeds (Jeerakam)
- 30 g Shahi jeera
- 1 nos Nut meg
- 5 g Nut meg mace
- 5 g Star anise
Preparation
Step 1
Gather and prep all your ingredients before you begin.
Step 2
Let's put the ingredients into a pan for dry roasting. give it a good stir continuously for 5 minutes on medium heat. If not stirred continuously, chances of burning are more. This process will increase the shelf life of garam masala powder.
Step 3
Shift this to an another plate and let it cool. Now shift it to the mixer jar and grind well.
Step 4
Now it's ready. Store it in a airtight container.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
