Maida Sweet
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 2 cup All purpose flour maida
- 5 cup Sugar
- 2 tbsp Ghee
- Rose essence Few drops
- Water, to taste
Preparation
Step 1
For preparing maida sweet, take a kadai and roast maida lightly in ghee. Set aside.
Step 2
In a heavy pan, add sugar and three cups of water and bring to boil.
Step 3
When the syrup reaches one thread consistency, add roasted maida to it slowly and stirring constantly.
Step 4
Stir adding ghee till the mixture thickens.
Step 5
Add rose essence, Stir everything together thoroughly and transfer the contents on to a greased plate and spread evenly.
Step 6
Wait for 5 minutes, make small square pieces.
Step 7
Maida sweet, a recipe is ready.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
