Maida Appam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 3 servings
- 2 cup All purpose flour Maida
- Sugar, to taste
- 1/2 cup Butter
- 1/2 tsp Soda powder
- 1/2 tsp Vanilla essence
- 1 nos Egg
Preparation
Step 1
For preparing maida appam, first beat sugar, butter and egg.
Step 2
Mix maida and soda powder well.
Step 3
Mix essence also.
Step 4
Now combine all and make a smooth batter adding little water if needed. Set aside for 1/2 hour.
Step 5
In appam chatti, pour the batter and add oil on sides.
Step 6
Make small appams in it.
Step 7
Maida appam is ready.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
