Madhura Kizhangu Mezhukkupuratti | Sweet Potato Stir Fry
This potato, also known as Sweet Potato Stir Fry, is a cherished dish in Kerala cuisine.
Ingredientsfor 2 servings
- 2 nos Sweet potato Madhura Kizhangu
- 2 pinch Turmeric powder
- 1-2 tsp Dried red chilly — crushed
- 1 tsp Mustard seeds
- 1/2 cup Water
- Curry leaves, a few
Preparation
Step 1
Cut the sweet potato into medium sized pieces.
Step 2
Add salt, turmeric powder and water into the sweet potato pieces. Pressure cook for 1 whistle.
Step 3
Warm the oil in a kadai and let the mustard seeds crackle.
Step 4
Add curry leaves and crushed chilly. stir for a few seconds.
Step 5
Finally add the cooked sweet potato.
Step 6
Mix this slowly for 4-5 minutes and turn off the heat.
Step 7
Serve it along with a cup of hot black tea.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
