Lobster Semolina Fry
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 2 nos Medium sized lobster
- 2 tsp Garlic paste
- 2 tsp Chilly powder
- 1 tsp Garam masala
- 1 tsp Cumin powder
- Semolina, as needed
- Pepper, to taste
- Salt, to taste
Preparation
Step 1
For preparing lobster semolina fry, marinate lobster with garlic paste, chilly powder, cumin, garam masala, pepper and salt.
Step 2
Keep it for 5 minutes.
Step 3
Sprinkle semolina on each side of lobster.
Step 4
Drizzle olive oil or butter in pan. Place lobster in it and press it with spoon so all the sides are equally cooked.
Step 5
Lobster semolina fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
