Lime Rice In Kerala Style
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 2 servings
- 1 cup Rice Basmati/any other superior white rice
- 2 nos Lime squeezed
- 1/4 tsp Turmeric powder
- 3 tbsp Nuts roasted, Nilakkadala parippu — ground
- 2 nos Green chillies sliced roundly
- 1 small Piece Ginger — chopped
- 1/2 tsp Asafoetida powder (Kayam)
- Coriander leaves, a few
- 2 tsp Oil
- 1 tsp Mustard seeds
- 1 tsp Cummin seeds (Jeerakam)
- 1 tsp Black gram parippu (Uzhunnu)
- 1 tsp Bengal gram (Kadalaparippu)
- 2 Dry red chillies broken
- Curry leaves, to taste
Preparation
Step 1
Cook rice in sufficient water and after proper draining spread out on a white cloth.
Step 2
Set a pan over medium heat and pour in the oil and crackle mustard seeds. Add cummin seeds, black gram, bengal gram, red chillies and sufficient curry leaves.
Step 3
Cook in low heat and add green chillies, chopped ginger and ground nuts.
Step 4
After frying for some time, add turmeric powder and cooked rice. Keep mixing and sprinkle asafoetida powder and sufficient salt.
Step 5
Remove the pan from fire and add lime juice. Mix and serve.
Step 6
Lime rice is ready and garnish with chopped coriander leaves.
Step 7
Tips:- 1)Roasted ground nuts are available in shops and you can buy them.
Step 8
Lime rice is recommended for long journeys due to its lasting.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
