Layer Pudding
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 6 servings
- 1 Tin Milkmaid
- 11/2 litre Milk
- Sugar, to taste
- 1 Pack Arrowroot biscuits
- 1 tbsp Butter
- 1 nos Mango — cut into small pieces
- 1/2 Of Pineapple — cut into small pieces
- 2 - Sugar
- 10 Mg China grass
Preparation
Step 1
Mix pineapple and mango pieces in sugar in a pan and cook it, stirring well till it become half dried.
Step 2
Grind the biscuits and Stir everything together thoroughly with butter.
Step 3
Cut china grass into small pieces and put into lukewarm water till it melts.
Step 4
Heat this mix in the stove.
Step 5
Get milk in a saucepan and heat it.
Step 6
When it boils, add milkmaid and sugar slowly.
Step 7
When this custard boils, add melted chinagrass into it.
Step 8
Remember both should have the same temperature.
Step 9
Remove pan from heat and set aside.
Step 10
In a pudding tray, add powedered biscuit and make a layer.
Step 11
Add fruits to make a layer.
Step 12
Pour custard slowly and make a layer.
Step 13
Allow to set.
Step 14
Like this make as many layers as possible.
Step 15
When it becomes cold, keep in refrigerator.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
