Lady`s Finger Gravy
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 15 nos Lady`s finger Vendakka
- 1/2 tsp Turmeric powder
- 1/2 tsp Coriander powder
- 1/4 tsp Chilly powder
- Salt, to taste
- 2 nos Onion — sliced
- 1 nos Tomato — sliced
- Curry leaves A, a few
- 1/4 tsp Garam masala powder
- 1/4 cup Thick coconut milk
Preparation
Step 1
Clean the lady`s finger well.
Step 2
Remove both their ends.
Step 3
Slit open horizontally, leaving its upper portion unslit.
Step 4
Mix together turmeric powder, coriander powder, chilly powder and salt.
Step 5
Rub the above mixture into the opened portions of the lady`s finger.
Step 6
Warm coconut oil in a pan.
Step 7
Fry the above lady`s fingers in it and keep them aside.
Step 8
Heat up the remaining oil in the pan.
Step 9
Add onions and cook them.
Step 10
Add tomatoes and cook well.
Step 11
Add the balance mixture of turmeric, coriander and chilly powders, if any left.
Step 12
Add garam masala powder and sauté, until the raw smell of masala leaves.
Step 13
Add curry leaves.
Step 14
Add the fried lady`s fingers.
Step 15
Add coconut milk and allow it to let it bubble for about 5 minutes.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
