Lady Finger Upperi
Finely chopped okra stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 3 servings
- 10 To Lady finger
- 5 nos Onion small
- 1/2 Bowl Grated coconut
- 1 tbsp Chilly powder
- 1/2 tbsp Turmeric powder
- Salt, to taste
- 1/2 tsp Mustard seeds
- 1/2 tsp Uzhunu
- Curry leaf a, a few
- Oil, to taste
Preparation
Step 1
Finley chope the lady finger in round shapes.
Step 2
Set a pan over medium heat and pour in the oil and add mustard and allow it to allow to crackle.
Step 3
Add uzhunu,curry leaf and small onions.
Step 4
When small onion becomes transparent put grated coconut and fry till light brown.
Step 5
Once coconut become brown put lady finger, chilly, turmeric powder and salt.
Step 6
Close it and cook for 10 - 15 minutes and cook in between.
Step 7
Serve it with rice and rotis or chappathi.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
