Ladies Finger Thoran
The everyday side dish that Kerala never tires of. Mixed is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 4 servings
- 15 nos Ladies finger Vendakka
- 1 nos Onion finely chopped, large
- 2 nos Green chilly — slit
- 2 tbsp Oil
- ½ tsp Mustard seeds
- Pepper powder A pinch
- Salt, to taste
Preparation
Step 1
Cut ladies finger into two pieces and then slit in the middle.
Step 2
Warm the oil in a pan.
Step 3
Add mustard seeds.
Step 4
When they begin to crackle, add onion, green chillies and ladies finger with salt.
Step 5
Stir everything together thoroughly and keep it covered.
Step 6
Do not add water at all. Stir after every 3 minutes.
Step 7
When the ladies finger shrinks, and the onions turn brown, add pepper powder.
Step 8
Serve while still hot with steaming rice.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
