Ladies Finger Pepper Fry
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 3 servings
- 500 g Ladies finger
- 1 tbsp Turmeric powder
- 2 tbsp Pepper powder
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Cut the ladies finger into 2 inch size. 2)Add turmeric powder, salt and very little water to partially cook veggies.
Step 2
Heat the pan and add 2 tbsp oil. 4)Transfer the partially cooked ladies finger to the pan.
Step 3
Sprinkle the pepper powder over the ladies finger.
Step 4
Let it fry for 5 minutes and then turn (flip) the ladies finger to the other side.
Step 5
Let it fry for a couple more minutes.
Step 6
The hot Crispy fry is ready!
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
