Ladies Finger Kerala Curry
This homestyle dal curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 3 servings
- 1/2 kg Ladies finger — sliced
- 1 cup Coconut — grated
- 2 nos Green chillies
- 1 cup Curd
- 2 tsp Coriander powder
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- 1 tsp Mustard seeds
- 2 nos Dry chillies
- 1/2 tsp Urad dal parippu (Uzhunnu)
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing ladies finger kerala curry, first fry ladies finger in little oil and set aside.
Step 2
Grind coconut and green chillies.
Step 3
Set a pan over medium heat and pour in the oil, add mustard seeds, urad dal and dry chillies. Add curry leaves and fry.
Step 4
Add the ground coconut and fry again.
Step 5
Add ladies finger and add little water.
Step 6
Simmer flame, add turmeric, coriander and chilly powder. Cook masala well.
Step 7
Mix little water to curd and blend well.
Step 8
Add to the curry. Do not boil the curd. take it off the heat before boiling starts.

Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
