Kuthi Ozhicha Mutta ( Egg ) Curry
A deeply satisfying kuthi ozhicha mutta ( egg ) curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 4 nos Egg
- 2 nos Onion
- 1/2 tsp Ginger / Garlic paste
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Chilli powder
- 1/2 tsp Fennel powder
- 1/4 tsp Garam Masala powder
- 1 nos Tomato
- 2 nos Green chilly
- Curry leaves
- 1 / Coconut milk
- 2 tbsp Oil
- Salt, as needed
Preparation
Step 1
Pour oil into a pan and heat it, add chopped onions, ginger / garlic paste and cook them well.
Step 2
Add turmeric powder, coriander powder, chilli powder, fennel powder, Garam masala powder and give it a good stir.
Step 3
Add finely chopped tomato, green chilly, curry leaves and mix them well.
Step 4
Add 1/2 cup of hot water, salt into the pan and mix it.When the gravy starts to boil, break each egg and pour it into the gravy. Close the pan with a lid and allow the eggs to cook well.
Step 5
Add coconut milk into the curry and when it starts to boil turn off the heat.
Step 6
Kuthi ozhicha mutta curry is ready.Serve hot with chapati, appam, puris or idiappam.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
