Kozhi Mint Roast

Ingredientsfor 4 servings
- 1 kg Whole chicken uncut and unskinned
- 1 tbsp Garlic paste
- 1 tbsp Ginger paste
- Salt, to taste
- 1 tsp Turmeric powder
- 1 tbsp Red chilly powder
- 3 tbsp Garam masala powder
- 1 bunch Mint leaves Pudhina
- 1 tbsp Pepper powder
- 2 nos Green chillies big
- 1 cup Yoghurt/Curd
Preparation
Step 1
For preparing Kozhi Mint Roast, first clean and wash the chicken well. Do not chop chicken into pieces. Keep chicken aside.
Step 2
Next, wash the mint leaves well. Grind together green chillies and mint leaves into a smooth paste. Set aside.
Step 3
Mix together yoghurt, turmeric powder, chilly powder, ginger paste, garlic paste, garam masala, pepper powder and salt in a bowl.
Step 4
Add pudhina-green chilly paste into the above yoghurt mixture.
Step 5
Mix them well to make a smooth mixture to get the consistency of a thick paste.
Step 6
Dry well the whole chicken.
Step 7
Make small slits(not too deep) in the chicken.
Step 8
Smear the above paste nicely on the bird and also into the cavity of the chicken.
Step 9
Cover all areas.
Step 10
Marinate in the fridge for 2 - 6 hrs.
Step 11
The longer the better.
Step 12
Pre heat oven to 350 degree centigrade.
Step 13
Place marinated chicken in the oven in an aluminium foil in the baking tray.
Step 14
Cover chicken with foil to prevent burning.
Step 15
Bake evenly, until juice runs clear.
Step 16
Alternatively, use meat thermometer.
Step 17
After about 1 hr, remove foil and grill for 20 more minutes at 400 degree centigrade to get that well browned look.
Step 18
Always check, if fully cooked and no blood is visible.
Step 19
Serve Kozhi Mint Roast hot with rice or flat bread.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
