Kozhi Chatti Pathiri | Layered Crepes With Chicken Filling
A staple flatbread of Kerala kitchens, cooked on a hot tawa until it puffs and develops golden spots. Tear it apart with your hands and use it to mop up every last drop of curry.
Ingredientsfor 7 servings
- 1 cup Maida / all purpose flour
- 250 g Chicken
- 1/2 tsp Turmeric powder
- 11/2 tsp Pepper powder
- 3/4 tsp Garam masala
- 3 medium Onion
- 11/2 tsp Ginger garlic paste
- 4 Green chilly
- 3 Egg
- Coriander leaves little
- Curry leaves little
- Salt to tast
Preparation
Step 1
For preparing Kozhi Chatti Pathiri, first mix maida, salt and enough water to make a soft dough. Divide into 5 equal parts and roll each piece into a ball. With the help of a rolling pin make very thin tortillas and cook these in pan for few minutes.
Step 2
Marinate the chicken pieces with pepper powder, salt and fry in hot oil it in oil.
Step 3
Mince the fried chicken into small pieces.
Step 4
Heat the oil in a vessel and cook onion until it has softened and lightly browned.
Step 5
Add green chilly, pepper powder, turmeric powder, garam masala, ginger garlic paste, coriander leaves, curry leaves, salt and Let it cook for 5 minutes. Add the minced chicken pieces and Fold everything together gently.
Step 6
Get a non stick vessel and spread ghee on it.
Step 7
In a bowl add two eggs and give it a good stir. Dip the tortillas in egg and place this in the nonstick pan. Add chicken mixture in the above and spread nicely.
Step 8
On top of it place one more tortilla dipped in egg. Again add meat mixture and spread it. Repeat it until the tortillas finish. Pour remaining egg on the top of it. let it go for 15 minutes, flip and cook on the other side until it goes golden brown.
Step 9
Serve it as a evining snack.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
