Kovakkai Poriyal
A very simple curry that goes well with rice, rotis etc. It is simple to prepare.
Ingredientsfor 3 servings
- 250 g Kovaikkai approx., Ivy gourd
- ½ cup Onion — chopped
- 1 Tspn Red Chilli Powder
- Salt, to taste
- ½ Tspn Turmeric Powder
- 2 Tspns Refined Oil
Preparation
Step 1
Clean, wash and cut the Kovakkai into small pieces.
Step 2
Heat the oil in a frying pan and add the chopped Onion into the Oil.
Step 3
Next, add the Turmeric Powder, Red Chilli Powder and Salt into the chopped Onion.
Step 4
Stir the mix for some time.
Step 5
Next, add the Kovaikkai pieces into this mix and stir it for 2 – 3 minutes (not necessary to add water).
Step 6
Cover the frying pan with a lid/plate and cook the mix in low flame.
Step 7
When the Kovakkai pieces are cooked well, stir it and then turn off the heat and change the Poriyal to a serving vessel.
Step 8
Kovakkai Poriyal is ready and it can served as a side dish for cooked rice, Chappathi/Poori etc.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
