Kovakkai (Ivy Gourd) Fry
Kovakkai (Ivy gourd) Fry is a Indian recipe served as a Side Dish normally served with hot boiled rice. This is a spicy fry where the kovakkai is marinated with the spices and deeply fried in oil.
Ingredientsfor 3 servings
- 20 nos Kovakkai Ivy gourd
- 3 – Sambar Powder
- Salt, to taste
- Coconut/Refined Oil As required to fry the Kovakkai
Preparation
Step 1
Clean, Wash and cut the Kovakkai (Ivy gourd) in round shape (as shown in above picture).
Step 2
Add Sambar Powder and Salt into the Kovakkai pieces and mix it well and set aside to coat the masala on the pieces properly.
Step 3
Heat the oil in a frying pan/Cheenachatty. Then put the masala (prepared with Sambar Powder and Salt) coated Kovakkai (Ivy gourd) pieces into the hot Oil and stir it occasionally.
Step 4
When the colour of Kovakkai pieces turns into brown, take the pieces out from the frying pan/Cheenachatty (by using a Sieve) and keep them in a plate and serve.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
