Kovakka Thoran
Gherkins or Kovakka Thoran finds an important place among Thoran side dishes in kerala. This Thoran goes perfect with a bowl of hot rice for noon day meals. This is unique and tasty with chopped Gherkins or Kovakka pieces blended with an aromatic coconut mixture.
Ingredientsfor 3 servings
- 200 g Kovakka Gherkins
- 1/4 Of Coconut
- 1/2 cup Small onions (Kunjulli)
- 5 nos Green chillies
- 1/2 tsp Turmeric powder
- 1 tsp Mustard seeds
- 3 – Small onions finely chopped — for seasoning
- Curry leaves, a few
- 3 nos Dry red chillies – 2 (Kollamulaku)
- Salt, to taste
- 3 tbsp Coconut oil
Preparation
Step 1
For preparing, clean the kovakka well and cut them into small pieces.
Step 2
Add to it the finely chopped small onions, green chillies, salt and turmeric powder.
Step 3
Place it in a vessel along with 1/2 glass of water and allow it to cook.
Step 4
Pound together the grated coconut and curry leaves in a mixer bowl.
Step 5
Set a pan over medium heat and pour in the oil or a kadai.
Step 6
Let the mustard seeds crackle and cook finely chopped small onions, dry red chillies and curry leaves.
Step 7
Add the cooked kovakka and the coconut mixture and Stir everything together thoroughly.
Step 8
Cook further, till done.
Step 9
A very And nutritious side dish is ready.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
