Kovakka Mezhukkupuratti | Tindora Stir Fry
Simple, honest, and on every Kerala lunch plate — mixed thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 300 g Gherkins Kovakka
- 1 nos Onion — chopped
- 2 tsp Chilly powder
- 1/2 tsp Turmeric
- Salt, to taste
- 2 Cloves Garlic — chopped
- 1 tsp Mustard seeds
- Curry leaves, a few
- 2 nos Dry red chillies half split
Preparation
Step 1
For preparing Kovakka Mezhukkupuratti, first cut kovakka into thin round shapes.
Step 2
Marinate with chilly powder, turmeric and salt for 15 minutes.
Step 3
Heat the oil in pan, allow to crackle mustard, dry red chillies and curry leaves.
Step 4
Add onion and fry it. Add the marinated gherkins and cook well. Add little water and cook it.
Step 5
When water is evaporated, fry well the gherkins.
Step 6
Tindora Stir Fry is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
