Kovakka Fry | Kovakka Varuthathu
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 12 nos Kovakka/Tindora
- 1/4 tsp Turmeric powder
- 1 tbsp Kashmiri chilli
- 1/2 tsp Pepper powder
- 1/2 tsp Garam masala
- 2 pinch Asafoetida
- 3/4 tsp Salt
- 1 tbsp Oil
Preparation
Step 1
First, rinse 250 grams of ivy gourd(kovakkai, dondakaya, tindora or tendli) very well in fresh water. Drain the excess water. Thinly slice off the top and bottom ends, and discard them. Slice the ivy gourd vertically in 4 parts.
Step 2
Add all spices and salt to taste.
Step 3
Mix the spices very well with the kovakkai.
Step 4
Heat 2 tbsp oil in a pan. Keep the heat to low and add the sliced kovakkai. cook until the kovakkai is cooked well.
Step 5
Switch off the heat and serve.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
