Kovakka Fry
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 5 servings
- 10 nos Kovakka
- 1 tsp Chilli powder
- 1/2 tsp Turmaric powder
- 11/2 tsp Corn flour
- Salt, to taste
- Oil for deep fry
Preparation
Step 1
Cut kovakka into small round pieces.
Step 2
Make paste of chilli powder, turmeric powder and Corn flour.
Step 3
Add the kovakka in to that paste.
Step 4
Pour oil into a pan and heat it and fry the marinated kovakka well.
Step 5
Garnish with fried curry leaves.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
