Kootu Curry
A blend of nutritious veggies and is a popular dish in Kerala Cuisine. You will find Kootu Curry in Sadhya dishes. No Sadhya is ever complete without the dish. Both cucumber and red peas come into the making of the healthy dish.
Ingredientsfor 3 servings
- 1/2 cup Red peas(Van payar
- 1 cup Cucumber — sliced
- 1/2 cup Coconut(grated
- 1/2 tsp Cumin Seeds (Jeerakam)
- 2 Cloves garlic
- Curry leaves, a few
- 1 tsp Mustard seeds
- 2 nos Shallots
- 1/4 tsp Turmeric powder
- 1/2 tsp Red chilly powder
Preparation
Step 1
For preparing the delicious curry, cook big red peas and cucumber separately adding a bit of salt and turmeric powder.
Step 2
Grind coconut with garlic and jeera and add this to the cooked mixture of cucumber and peas.
Step 3
Pour oil into a pan and heat it.
Step 4
Let the mustard seeds crackle and cook curry leaves.
Step 5
Add shallots and a little bit of chilly powder.
Step 6
When onion goes golden brown, put the veg mix into the pan and mix it well.
Step 7
Serve while still hot with rice.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
