Koottukari - Brahmin Special
Kumbalanga, chana dal, elephant yam and other ingredients are cooked together.
Ingredientsfor 4 servings
- 1/4 kg Ash Gourd/White Gourd (Kumbalanga)
- 1/4 kg Elephant yam Chena
- 1 cup Chana dal Kadala parippu
- 1 tsp Turmeric powder
- 1 tsp Cumin seeds (Jeerakam)
- 3 nos Red chillies
- 11/2 cup Coconut — grated
- 2 tbsp Coconut oil
- 1 tsp Urad dal parippu (Uzhunnu)
- 1 tsp Mustard seeds
- 1 piece Jaggery Sharkara
- 3 tsp Salt
Preparation
Step 1
For prepraring kootukari - brahmin special, wash kumbalnga, elephant yam and chana dal and boil it in the cooker with sufficient quantity of water take about 2 cups of water so that the vegetables are immersed in water). Add turmeric and salt to this.
Step 2
Grind the grated coconut 1 cup with jeerakam and red chillies adding some water.
Step 3
Add the cooked vegetables to the ground coconut mixture and allow to boil for a few minutes. Then add jaggery.
Step 4
Fry mustard seeds and urad dal in coconut oil. Add the remaining 1/2 cup grated coconut and keep frying till it becomes brownish in color.
Step 5
Stir in the fried ingredients into the cooked vegetable mixture. Add curry leaves.
Step 6
Koottukari - brahmin special recipe, is ready. Serve hot.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
