Kongan Pathiri
Soft, layered, and golden from the griddle — this kongan pathiri is the perfect vehicle for scooping up thick curries and gravies. The dough rests until pliable, then gets cooked until each layer separates.
Ingredientsfor 4 servings
- 1 cup Rice
- 1/2 cup Coconut
- 1/2 tbsp Cumin seeds (Jeerakam)
- Salt, to taste
- Oil, to taste
Preparation
Step 1
For preparing kongan pathiri, soak the rice in water for 8 hrs.
Step 2
Grind it well in a mixer grinder without adding much water.
Step 3
Add the 2 to 4 ingredients to it and grind it well.
Step 4
Get some of the made dough in hand and press it in a banana leaf.
Step 5
Fry it in oil.
Step 6
Kongan pathiri, a recipe is ready.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
