King Fish Roast
Pan-fried until the edges go dark and crispy, this fish fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 10 piece King fish marinated with turmeric powder, chilly powder & salt
- 3 nos Onion
- 1 tsp Ginger
- 1 tsp Garlic
- 3 nos Green chillies
- 1 nos Tomato
- 1 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1/2 tsp Garam masala
- 1/4 tsp Turmeric powder
- 1/4 tsp Pepper powder
- Curry leaves A, a few
- Coriander leaves, to taste
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Fry the fish in oil.
Step 2
Heat up a pan and add the same oil used for frying the fish.
Step 3
Add onion and cook until it becomes brown.
Step 4
Add ginger, garlic, masala powders, green chillies and salt and sauté.
Step 5
Add tomatoes and cook until it becomes dark brown.
Step 6
Add the leaves and set aside.
Step 7
Get a serving dish and place some masala on it.
Step 8
Keep the fried fish over it and layer it another portion of the masala.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
