King Fish Fry | Neimeen Varuthathu
A proper Kerala fry — fish tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 2 servings
- 3-4 slice King fish or any fleshy fish Cut and clean
- 1/2 tsp Red chilli powder
- 11/2 tsp Kashmiri chilli powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Pepper — ground
- 1 small Piece Ginger
- 2-3 Cloves Garlic
- 11/2 tsp Lemon juice
- 3-4 nos Shallots
- Coconut oil — for frying
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
Cut and clean the fish. Slice into rounds.
Step 2
Grind all the ingredients together and make a fine paste.
Step 3
In a bowl take fish pieces and marinate with this mix.
Step 4
Cover with a lid and keep in refrigerator for 1-2 hours.
Step 5
Warm the oil in a pan for pan-frying. When oil is heated, spread 2-3 curry leaves spring in this. Then arrange fish pieces on top of the curry leaves and fry in hot oil the fish.
Step 6
Pan-fry each side.
Step 7
Serve Kerala Style Fish Fry hot and crisp with noon day meals.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
