Khathirikka Fry
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 3 servings
- 3 nos Brinjal — cut into round pieces and put them in salt water so as to get rid of the serum, khathirikka
- 10 nos Dry red chillies – 8 (Kollamulaku)
- 1 tbsp Peppercorns
- 4 nos Garlic pods
- 1 tbsp Vinegar
- 3 tbsp Oil
- Curry leaves A, a few
Preparation
Step 1
Grind together red chillies, pepper, garlic and curry leaves into a paste.
Step 2
Marinate the brinjal pieces with the above paste and vinegar for about 30 minutes.
Step 3
Heat the oil in a frying pan (pan-frying).
Step 4
Add the marinated brinjal pieces and fry.
Step 5
Flip them to fry the other side too.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
