Kesari
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1 cup Semolina Rava
- 1 cup Ghee
- 11/2 cup Sugar
- 1/2 tsp Cardamom powder (Elakka)
- 15 nos Cashewnuts
- 15 nos Kismis
- Yellow Color
- 2 cup Water
Preparation
Step 1
Heat the ghee in a pan and add semolina and and cook until it changes color and become crisp.
Step 2
Add hot water into this and give it a good stir for about 2 minutes until the semolina gets cooked.
Step 3
Add sugar, cardamom powder and yellow color (mixed in a little water).
Step 4
Give it a good stir until the kesari doesn`t stick to the pan.
Step 5
Add fried cashewnuts and kismis.
Step 6
Pour kesari into a bottom flat bowl and set aside for 1/2 hour to let it cool.
Step 7
When it cools, cut it into any shape and refrigerate.
Step 8
Kesari is ready.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
