Kerala Vellappam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 6 servings
- 3 cup Rice
- 1/4 Black gram (Uzhunnuparippu)
- 1/2 cup Cooked rice
- 1/2 cup Coconut — grated
- 1 tsp Sugar
- Salt, to taste
Preparation
Step 1
Soak rice and blackgram in water for 5 hours.
Step 2
After 5 hours, grind this well.
Step 3
Grind together sugar, coconut powder and cooked rice nicely.
Step 4
Mix 1 and 2 nicely and leave for 6-7 hours.
Step 5
Later add salt anad make appams in vellappam pan in round shapes.
Tip
A well-seasoned appachatti is worth the investment. The appam should release from the pan without any resistance.
