Kerala Vegetable Upma

Ingredientsfor 4 servings
- 2 cup Fried Rava
- 1 nos Onion
- 3-4 nos Green Chilies — cut into small pices
- 1 piece Ginger — chopped
- 2 nos Red chilies (Kollamulaku)
- 1/2 tsp Mustard seed
- Curry leaves, a few
- Salt, to taste
- 2 tsp Coconut oil
- 100 g Beans — cut into small pieces
- 3 nos Carrot — cut into small pieces
- 2 nos Tomato — cut into small pieces
- Peas A handful
Preparation
Step 1
For preparing Kerala Vegetable Upma, first Heat the oil in a pan.
Step 2
Add enough water for boiling rava and let the water boil.
Step 3
Add some salt to the water and add the rava and stir it continuously. Set aside.
Step 4
Heat the oil in another pan, let the mustard seeds crackle, add whole red chilies, onion, ginger, green chillies and curry leaves to it.
Step 5
Add beans, carrot, peas, required salt and cook it, stirring for 3-4 minutes.
Step 6
Add the above prepared rava to the vegetable mix and stir it continuously.
Step 7
Add tomato to it and set aside.
Step 8
Serve Kerala Vegetable Upma hot.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
