Kerala Varal Curry
A sought after fish delicacy especially for those who love viral fish. The spicy, tangy gravy is able with hot rice. Varal fish is also known as dragon head fish or banded snake head fish.
Ingredientsfor 4 servings
- 1/2 kg Varal fish
- 10 nos Shallots (Kunjulli)
- 11/2 tsp Fenugreek seeds (Uluva)
- 1 tbsp Chilly powder
- 2 tsp Coriander powder
- 1 tsp Turmeric powder
- Salt, to taste
- Curry leaves, a few
- Ginger garlic paste - 2 tsp
- 1 Lemon Tamarind
Preparation
Step 1
For preparing kerala varal curry, clean fish and cut into pieces.
Step 2
Heat oil, add fenugreek seeds, onion and fry till color changes.
Step 3
Grind the onion into paste.
Step 4
In the same pan, add oil and fry the onion paste, ginger-garlic paste, chilly powder and coriander powder.
Step 5
Fry till it gets brown color.
Step 6
Add turmeric powder and tamarind water.
Step 7
Add the curry leaves and fish pieces. Put the lid on and cook till fish is done.
Step 8
Pour coconut oil on top and serve hot.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
