Kerala Vanpayer Olan
It is a dish of kerala with venpayar. Olan is normally an important dish at the time of onam.
Ingredientsfor 6 servings
- 1 cup Pumpkin
- 1/2 cup Vanpayer
- 4 Chilly
- 1/2 cup Coconut milk
- 1 tsp Salt
- 1 tsp Coconut oil
Preparation
Step 1
Cook Pumpkin with 1/2 cup of water chilly and salt.
Step 2
Cook vanpayer with 1/2 cup of water.Beans should not overcook as it retains it shape.
Step 3
Add the cooked beans to cooked pumpkin and Stir everything together thoroughly.let it bubble for 2 minutes.
Step 4
Add coconut milk,curry leaves and mix.
Step 5
Let it bubble for 2 minutes.Add little coconut oil and serve.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
