Kerala Ulli Bajji | Onion Bajji
Deep-fried until the outside shatters at the first bite and the inside stays soft and flavourful. A tea-time favourite across Kerala, especially when the monsoon rain is hammering the roof.
Ingredientsfor 4 servings
- 3 nos Onions
- 6 nos Green chillies
- 1 cup Gram flour Kadala podi
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Chop onions (length-wise) and green chillies.
Step 2
Make a thick batter with gram flour.
Step 3
Mix onions and green chillies in batter along with salt.
Step 4
Set a pan over medium heat and pour in the oil.
Step 5
Pour a spoon of the batter into the hot oil and fry the bajjis.
Step 6
Drain on a paper towel.
Step 7
You can substitute onion with potato or baingan slices but use chilly powder instead of green chillies.
Step 8
The delicious snack with hot tea.
Tip
Do not overcrowd the pan — fry in small batches to maintain the oil temperature. Crowding drops the heat and gives you greasy results.
