Kerala Style Vegetable Kurma
an awesome vegetarian side dish ed with roti, chappathis and even bread. A tasty dish enriched with cashews and raisins.
Ingredientsfor 6 servings
- 2 cup Mixed vegetables
- 2 nos Onion chopped, medium
- 7 - Green chillies chopped, medium
- Curry leaves A, a few
- 1/2 tsp Ginger paste
- 1/2 tsp Garlic paste
- 4 nos Cloves (Grambu)
- 3 nos Cardamom (Elakka)
- 4 tbsp Coriander powder
- Salt, to taste
- 7 nos Cashewnuts — grind with little milk and keep aside
- 1 tbsp Raisins
- 2 - Oil
- 2 cup Water
- 11/2 cup Coconut milk
- Coriander leaves(chopped — for garnishing
Preparation
Step 1
For preparing Kerala Style Vegetable Kurma, first heat 2 - 3 tbsp of oil in a fry pan or kadai.
Step 2
Add chopped onions, green chillies, curry leaves, cloves and cardamom and fry for 2 - 3 minutes on medium heat.
Step 3
Add ginger and garlic paste and fry for 2 minutes on low heat.
Step 4
Mix coriander powder with little water and make a paste. Add it to the frying mixture and fry for 3 minutes on medium heat.
Step 5
Add ground cashewnuts and raisins.
Step 6
Add mixed vegetables and Stir everything together thoroughly with the masala.
Step 7
Pour two cups of water and salt into it.
Step 8
Cover with a lid and let it cook, approximately 15- 20 minutes.
Step 9
Stir intermittently.
Step 10
Add coconut milk and Bring to a gentle boil.
Step 11
Garnish with coriander leaves.
Step 12
It`s a medium thick gravy preparation.
Step 13
Serve Kerala Style Vegetable Kurma hot with chappathis/rotis.
