Kerala Style Squid Masala
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 5 servings
- Squid : ½ k gm
- Onion : 2 nos — chopped
- Curry leaves : 15 nos
- Green Chilly : 3 nos (cut into small pieces
- Tomato : 1 nos — chopped
- Garam masala : ½ tsp
- Chilly powder : 1 ½ tsp
- Pepper powder: ½ tsp
- Any chicken masala : ½ tsp
- Salt, to taste
Preparation
Step 1
Marinate the squids with salt and chilly powder. Set aside for an hour.
Step 2
In an earthen pot, add a little oil followed with chopped onion, curry leaves, green chilies, garam masala, pepper powder and chicken masala.

When the onion starts browning, add the tomatoes to it.
Step 5
Mean time, fry the squids with a little oil, on a low flame. (half cook).
Step 6
Add the fried squids to onion masala. Adjust salt, close and cook for another 10-15 minutes on low heat.
Step 7
Kerala style squid masala ready.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
