Kerala Style Simple Chemmeen Fry
A quintessential dish from the coastal state of Kerala in southern India.
Ingredientsfor 4 servings
- 1/2 kg Chemmeen Medium Sized shrimps
- 1 inch Ginger — finely chopped
- 3 nos Garlic Finely chopped, medium cloves
- 10 nos Green Chilli Slit into 2
- Curry Leaves A handful
- 2 tsp Red Chilli powder
- 2 tsp Turmeric powder
- 2 tbsp Corn Flour
- Salt, to taste
- 4 tbsp Oil
Preparation
Step 1
For preparing Kerala Style Simple Chemmeen Fry, first de-vain the shrimps and clean it well.
Step 2
Dry the shrimps and set aside.
Step 3
In a bowl mix together red chilli powder and turmeric powder.
Step 4
Add the drained shrimps to it with required salt and marinate it well.
Step 5
Add the corn flower in small amounts and Stir everything together thoroughly to coat the shrimps well.
Step 6
Set aside for 30 minutes.
Step 7
Set a Kadai over medium heat and pour in the oil.
Step 8
Add the marinated shrimps and fry in medium heat. When done, add the finely chopped ginger, garlic and green chilli.
Step 9
When the garlic and ginger mix start to change the color lightly, stir and mix it well(be careful with hot oil).
Step 10
Switch off the heat and add the curry leaves and lightly mix. Do drain the oil out well.
Step 11
Kerala Style Simple Chemmeen Fry is an excellent dish, serve with rice.
Step 12
Excellent dish, can also be served as a starter along with finally chopped vinegar picked onions.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
