Kerala Style Prawn Fry | Konju Fry
Among the many treasures of Kerala's cuisine, Kerala Style Prawn Fry, locally known as Konju Fry, stands out as a dish that encapsulates the essence of coastal flavors and spices.
Ingredientsfor 4 servings
- 1/2 kg King prawns
- 1 tbsp Lime juice
- 7 nos Shallots
- 1 tbsp Chilly powder
- 5 nos Pepper corns
- 3 nos Green chillies
- 1 tsp Coriander powder
- 1 tsp Turmeric
- 2 tsp Cumin powder
- 3 Cloves Garlic
- 2 tsp Ginger — chopped
- Salt, to taste
Preparation
Step 1
For preparing spicy prawn/konju fry, grind together all the ingredients for preparing marinade into a paste.
Step 2
Clean prawns, retain head and tail. Cut in the middle, devein it and flatten the prawns.
Step 3
Rub the masala on the prawns and set aside for 1 hour.
Step 4
Heat a pan, pour oil (2 tbsp) and fry in hot oil the prawns.
Step 5
Spicy kerala prawn fry is ready. Add the lime juice on top and serve hot.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
