Kerala Style Nadan Carrot Thoran
A classic Kerala thoran where carrot meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 6 servings
- 1 cup Carrot
- 1 tsp Mustard
- 1/2 cup Coconut — grated
- Salt, to taste
- 2 tsp Coconut oil
- 1 cup Water
- 3 Red chilli
- 1 tsp Urad dal
- 1 tsp Chili powder
- 1/2 tsp Turmeric powder
- 10 Curry leaves
Preparation
Step 1
Cook carrot with 1 cup of water in a cooker.
Step 2
Let it cook for 5 minutes in high flame.
Step 3
Warm the oil in a kadai add mustard's when it allow to crackles add urad dal,red chili and curry leaves cook fora minute.
Step 4
Add cooked carrot to this and cook for a minute.
Step 5
Add some grated coconut to this carrot and Let it cook for 2 minutes.
Step 6
Add chili powder,salt and turmeric powder,mix everything together.Let it cook for 2 minutes in low flame.
Step 7
Now Kerala style nadan carrot thoran is ready to serve.Carrot thoran can eat well with chapathi and rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
