Kerala Style Mushroom Thoran
Finely chopped mushroom stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 2 servings
- 10-15 nos Mushroom
- 5 nos Onion small
- 3-4 nos Green chilly
- Curry leaf, a few
- Coconut one small bowl — grated
- Mustard, a few
- 1/2 tsp Turmeric
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Heat the oil in pan and put mustard.
Step 2
When mustard crackles add curry leaf.
Step 3
Add onion and cook it, stirring well.
Step 4
Add mushroom,turmeric powder, coconut,saltgreen chillies. :-Can use either half cooked mushroom for tht reduce cooking time.
Step 5
Add little bit of water and close the pan cook in low flame for 10-15 mints.
Step 6
Serve as a side dish for rice,even chapatti.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
