Kerala Style Mango Pachadi
Part of the grand Kerala banana-leaf feast, this dish brings together simple ingredients with precision. The flavours are clean and distinct — nothing fights for attention, everything has its place.
Ingredientsfor 5 servings
- Mango (raw and sour) : 1 no
- Coconut : 1 cup — grated
- Jeera : 1 tsp
- Mustard : 2 tsp
- Shallots :6 nos
- Curry leaves, a few
- Red Chilli : 2 nos
- Oil, a few
- Water, to taste
- Salt, to taste
- Fenugreek Powder : 1 tsp
Preparation
Step 1
Chop mango into small pieces.
Step 2
Grind grated coconut, jeera and 3 shallots into a fine paste.
Step 3
Roughly crush the mustard seeds. Add it to the coconut paste.
Step 4
Mash the mango pieces and add this also to the coconut paste.
Step 5
Heat oil, allow to crackle the mustard seeds and then add the remaining shallots.
Step 6
Add curry leaves and dried red chilli to this.
Step 7
Stir once and add the mango mix and salt to it.
Step 8
Stir everything together thoroughly, add some water. Wait till the mixture is hot.
Step 9
Stir in fenugreek powder.Stir everything together thoroughly and remove it from fire.
Step 10
Mango pachadi is ready.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
