Kerala Style Ghee Rice
an aromatic savory rice dish made with rice, ghee and spices. This recipe is a Malabar special and from the Kerala cuisine. This is a very simple recipe and takes your simple meal to a different level.
Ingredientsfor 2 servings
- 1 cup Basmati rice
- 1 nos Onion medium
- 2 tbsp Ghee
- 1/2" piece Cinnamon (Karugapatta)
- 1 nos Cloves (Grambu)
- 1 nos Cardamom (Elakka)
- Fennel seeds A pinch (Perinjeerakam)
- 2 cup Water
- Salt, to taste
Preparation
Step 1
Soak rice in water for about 30 minutes.
Step 2
Heat ghee in a heavy bottomed vessel.
Step 3
Add fennel seeds.
Step 4
After a few seconds, add onion and stir, till, it turns transparent.
Step 5
Add cinnamon, cloves and cardamom and stir.
Step 6
Add 2 cups of water.
Step 7
For 1 cup of rice, add 2 cups of water.
Step 8
Add enough salt and Stir everything together thoroughly.
Step 9
Allow it to boil.
Step 10
Add washed rice and let it boil.
Step 11
Put the lid on and cook on a low flame.
Step 12
When there is no water, remove and keep the lid closed, until rice is cooked well.
Step 13
Goes well with parippu (dal) curry, chicken or mutton curry, pickle and curd.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
