Kerala Style Egg Burji Easy
Kerala Style Egg Burji is one of the easiest and most satisfying side dish prepared by scrambling eggs. You can find the dish quite popular in highway stalls and street side stalls.
Ingredientsfor 3 servings
- 5 nos Egg
- 5 nos Green chilly
- 1 nos Onion
- 1 tsp Coriander powder
- 1/2 tsp Chilli powder
- 1 tsp Turmeric powder
- Coconut oil, to taste
- 1 Spring Curry Leaves
- Salt, to taste
Preparation
Step 1
For preparing Kerala Style Egg Burji, first Warm coconut oil in a pan, add onion and Let it cook for 2 minutes.
Step 2
Add chopped green chillies and curry leaves and cook for a minute.
Step 3
Add turmeric powder, chilli powder and coriander powder. Stir for a minute.
Step 4
Add eggs to this and scramble for 3 minutes in high flame.
Step 5
After egg is cooked completely we can switch off gas stove.
Step 6
Now Kerala style egg burji is ready.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
