Kerala Style Egg Burji
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 3 servings
- 5 nos Eggs
- 5 Green chillies
- 1 nos Onion
- 1 tsp Salt
- 1 tsp Coriander powder
- 1/2 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 tsp Coconut oil
Preparation
Step 1
Warm coconut oil in a pan, add onion and Let it cook for 2 minutes.
Step 2
Add chopped green chillies and curry leaves and cook for a minute.
Step 3
Add turmeric powder, chilli powder and coriander powder. Stir for a minute.
Step 4
Add eggs to this and scramble for 3 minutes in high flame. Sprinkle required salt.
Step 5
After egg are cooked completely we can switch off gas stove.
Step 6
Now Kerala Style Egg Burji is ready.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
