Kerala Style Easy Chicken Curry | Kerala Chicken Curry
Cooked low and slow until the masala melds into the gravy, this chicken curry carries the unmistakable warmth of Kerala spices — black pepper, curry leaves, and coconut. Pair it with steaming rice and a crisp pappadam.
Ingredientsfor 4 servings
- 1 kg Chicken
- 11/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 3 tsp Coriander powder
- 1 tsp Garam masala powder
- 1 tsp Pepper powder
- 1 tsp Ginger Paste
- 1 tsp Garlic paste
- 1/2 tsp Aniseeds — powdered (Perinjeerakam)
- 6 nos Cardamom — ground (Elakka)
- Salt, to taste
- 2 tsp Coriander leaves — chopped
- Curry leaves A, a few
- 2 - Cooking oil
- 2 nos Onions chopped, medium
- 3 nos Green chillies — chopped
- 1 nos Tomato — chopped
- 2 cup Hot water
Preparation
Step 1
For preparing Kerala Style Easy Chicken Curry, first cut the chicken into medium sized pieces.
Step 2
Marinate the chicken with red chilly powder, turmeric powder, coriander powder, pepper powder, garam masala and cardamom powder for about 30 minutes.
Step 3
Warm the oil in a pan.
Step 4
Add ginger and garlic paste and fry until it goes golden brown.
Step 5
Add sliced onions, green chillies, coriander leaves and curry leaves and give it a good stir.
Step 6
When it becomes lightly browned, add tomato pieces.
Step 7
When the tomatoes become tender, add powdered aniseeds.
Step 8
Add chicken pieces followed by hot water and salt and cook thoroughly.
Step 9
When the gravy becomes thick, remove from the stove.
Step 10
Kerala style chicken curry is ready.
Step 11
Serve Kerala style chicken curry with rice, idiyappam, appam, chappathis / tortillas or bread.

Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
