Kerala Style Chicken Stew
A gentle, coconut milk-based stew with soft vegetables and whole spices floating in a pale, fragrant broth. Kerala stew is quiet comfort food — not loud with chilli, but warm with cardamom and black pepper.
Ingredientsfor 5 servings
- 1 kg Chicken
- 1 handful Small onions (Kunjulli)
- 5 nos Garlic pods big
- 1 small Ginger
- 12 nos Green chillies
- 3 nos Cloves (Grambu)
- 2 nos Cinnamon (Karugapatta)
- 2 glass Coconut milk
- Coconut oil A little
- Salt, to taste
Preparation
Step 1
In a pressure cooker, place all the ingredients except the coconut milk and coconut oil and cook till done.
Step 2
After the chicken has cooked well, add coconut milk. give it a good stir.
Step 3
Add salt and Stir everything together thoroughly again.
Step 4
Don`t allow the milk to boil.
Step 5
After the milk has heated well and mixed together, you can put it off the fire.
Step 6
Pour some coconut oil on top.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
