Kerala Style Baked Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 4 nos Chicken thighs
- 1 cup Curd
- 1 tbsp Corn flour
- 1 tbsp Chilly powder
- Ginger garlic paste - 1 tbsp
- 2 tsp Coriander powder
- 1 tsp Turmeric powder
- 2 tsp Cumin powder
- 2 tsp Pepper corns — crushed
- 1 nos Onion — chopped
- 4 nos Green chillies — slit
- 1 tbsp Lime juice
- 1 tbsp Butter
- Salt, to taste
Preparation
Step 1
For preparing kerala style baked chicken, marinate the chicken pieces with coriander, pepper, chilly powder, cumin, turmeric, corn flour, onion, lime juice, ginger-garlic paste, curd and salt.
Step 2
Keep it over night.
Step 3
Apply butter in a tray and place chicken pieces in it. Apply butter over chicken also.
Step 4
Bake it in oven at 250 degrees for 1 1/2 hours.
Step 5
Turn in between.
Step 6
Kerala style baked chicken is ready.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
