Kerala Style Ada Payasam, Everyone Loves It
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.
Ingredientsfor 7 servings
- Wheat Ada : 100 gm — roasted
- Milk : 1 ltr
- Sugar : 11 tsp
- Cashew Nuts: 10 pcs
- Cardamom: 3 pcs
Preparation
Step 1
Boil the milk.
Step 2
Add roasted Wheat Ada, sugar, Cashew nuts and cardamom to this. (Adding a table spoon of Ghee or butter will add to taste).
Step 3
Enter Step.
Step 4
Cook until the Ada has softened. (approximately 30 minutes in low flame).
Step 5
Serve while still hot / cold.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
