Kerala Spicy Fish Fry(Meen)
Pan-fried until the edges go dark and crispy, this fish fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 250 g King fish
- 1 tsp Chilly powder kashmiri chilly
- 1/2 tsp Turmeric powder
- 1/2 tsp Pepper powder
- 1/2 tsp Ginger & garlic paste
- Fenugreek powder a pinch
- Salt, as needed
- Oil for shallow frying
Preparation
Step 1
Mix into a paste all the above ingredients except the fish.
Step 2
Apply the paste to the fish and keep in the fridge to marinate for 10 minutes.
Step 3
Heat the oil in a non stick pan.
Step 4
When heated, slide the fish slowly and allow to cook on medium heat.
Step 5
When both sides are brown on the outside, lower the flame and cook till done. 6)Remove from the pan and garnish. Serve hot!
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
